All temperature dependencies can be fitted to a VogelTammann-Fulcher equation. The isothermic concentration dependence of D for the sucrose is given by a simple exponential concentration dependence.

Temperature dependence of the rotational mobility of the sugar and water molecules in concentrated aqueous trehalose and sucrose solutions.
Carbon-13 and deuteron spin lattice relaxation times T1 of concentrated solutions of trehalose and sucrose in heavy water are given as function of temperature. From the temperature dependence of the T1 ideal glass transitions temperatures T0 are derived. For both compounds the T0 derived for the disaccharides are at high concentrations larger than the T0 of the water molecules.
متن کاملThermal diffusion of oligosaccharide solutions: the role of chain length and structure.
We investigated the chain length dependence of the thermodiffusion behavior of oligosaccharides by the infrared thermal diffusion forced Rayleigh scattering (IR-TDFRS) technique. Three disaccharides, sucrose, cellobiose and maltose, two trisaccharides, melezitose and raffinose, and a tetrasaccharide, stachyose, have been studied. We determined the thermal diffusion (D(T)), mass diffusion (D), a...
متن کاملIonic self-diffusion in concentrated aqueous electrolyte solutions.
A self-consistent microscopic theory is developed to understand the anomalously weak concentration dependence of ionic self-diffusion coefficient D(ion) in electrolyte solutions. The self-consistent equations are solved by using the mean spherical approximation expressions of the static pair correlation functions for unequal sizes. The results are in excellent agreement both with the known expe...
متن کاملSucrose diffusion in aqueous solution
The diffusion of sugar in aqueous solution is important both in nature and in technological applications, yet measurements of diffusion coefficients at low water content are scarce. We report directly measured sucrose diffusion coefficients in aqueous solution. Our technique utilises a Raman isotope tracer method to monitor the diffusion of non-deuterated and deuterated sucrose across a boundar...
متن کاملEffect of sodium tetraborate (borax) on the thermal properties of frozen aqueous sugar and polyol solutions.
The effect of sodium tetraborate (Na(2)B(4)O(7), borax) on the thermal property of frozen aqueous sugar and polyol solutions was studied through thermal analysis. Addition of borax raised the thermal transition temperature (glass transition temperature of maximally freeze-concentrated solutes; T(g)') of frozen sucrose solutions depending on the borax/sucrose concentration ratios. Changes in the...
